I think people is ok as the validated French translation uses "men" but can be understood just as "human beings".

@ Gamine, in this case the article "the" is necessary because we are not talking about everyone, but of certain group of people, those "who understand (are skilled in?) their work (craft, job, profession). It could also be "those people"

@ itsatrap, I don't think this refers only to "male human beings", but as people in general. Sometimes a literal translation turns out innacurate.
