What about turn that line into:

"My love for you is such an impossible thing to define".

And perhaps
"Know that you are my indispensable" into:

"Be aware that you are indispensable to me"

the second one [Be aware that you are indispensable to me] is ok but it is better not to change the first one because it doesnt give the same meaning..

But it doesn't sound well...

If what is impossible to be defined is "my love for you", that's the subject.
Or, you can say:
"There is something impossible to define: my love for you", but I still think my first suggestion would be better.

I don't understand how the meaning could change...

My love for you is such a thing that it is impossible to define it.

what do you think now?

"My love for you is something impossible to define (be defined)."
